Kale (I bunch)
Fresh Garlic (10 cloves)
Scallions (3 sliced)
2 tomatoes
Pumpkin or Sunflower Seeds
1 Lemon
2-4 TBSP of olive oil
Himalayan Salt
Pepper
Preheat oven to 350. Peel Garlic, leave whole add to pan. Drizzle olive oil in pan. Sprinkle with Himalayan salt and pepper. Cook in oven for 10 minutes. (The oil will be part of your salad dressing).
Wash Kale, chop to a size of your liking. Add to bowl, add sliced tomatoes, scallions, seeds, squeeze the juice of one lemon. Add cooked garlic and olive oil, toss and enjoy!
