Heat two large skillets medium to high heat. Add oil to both. This way they'll heat up while your prepping.
Chop the vegetables, starting with the red onion. Add the onion to the skillet first.
Place yams in the microwave, depending on the power this typically takes 5-8 minutes, check softness to ensure it is done.
Continue chopping the rest of the vegetables and add them as you go.
In the other skillet, add the chicken sausage, I like to remove the casing around it, chop or separate the sausage as it's cooking. Sausage should be done in about 8 minutes.
Slice open your yam, place half on each plate, top with vegetables and chicken sausage - Enjoy!
