Simple Egg Muffins

Muffin pan and baking paper cup needed.
Cooking Time

Yields
6 Muffins
Ingredients
1 bell pepper
3 green onions
1/2 cup sliced mushrooms
1 tomato
6 eggs
1 large handful spinach
2 slices fresh cheese (cheddar, goat cheese, gouda - pick your favorite!)
1 tsp salt & pepper
2 tbsp hot sauce (or curry powder)
Directions
Preheat the oven to 200°C/ 390°F.
Wash and dice the pepper, onions, mushrooms and tomatoes. and put them in a large mixing bowl.
Wash the spinach, lightly chop it and add it to the bowl as well. Add the eggs and salt. Mix well.
Add hot sauce, curry powder.
Layer muffin pan with cups.
Layer cheese over the top of each muffin or you can mix the cheese in to the batter or both!
Cook for 15-18 minutes or until the tops are firm to the touch.
