Peel the garlic, place on cooking sheet, top with olive oil and roast for 8-10 minutes.
In a blender or food processor, combine the beans, roasted garlic, olive oil and lemon juice, water, cilantro and sriracha and process until smooth. Season, to taste, with salt and pepper. Garnish with scallions and serve with your favorite vegetables or rice crackers.
Add water if the consistency is too thick or dry.
***It can be tricky to get the consistency right so don’t hesitate to keep adding water till its nice and smooth.
